Ingredients

Salmon fillets

Peppercorns and Sea Salt

Butter
|

Garlic, minced

Limes

¼ - ½

Cilantro, chopped

In small saucepan, add a little olive oil and butter and sauté minced garlic for a second, add 1 cube butter. Squeeze one lime and a little lime zest in pan. Just melt on low and turn off.

Put salmon filets on grill skin side down and salt and pepper. Brush on butter mixture and close lid and cook on medium low for 15 minutes (depending on thickness of filets) and brush again with butter mixture. You shouldn’t have to turn over. When done it should have a crispy skin and the fish should be moist and delectable.

Sprinkle a little chopped cilantro on top and serve with a wedge of lime on the side.

Would be good with grilled corn, grilled artisan bread and fresh green beans.
